Noah's Mill is a handmade, craft small batch, made in the hills of Bardstown, Kentucky (the heart of bourbon country) by the Kentucky Bourbon Distillers. This company has its origins in the Willett Distilling Company, founded in 1935, with the Willett family itself having a distilling tradition dating back to just after the Civil War.
This bourbon is a cask strength small batch. That means first and foremost that it is a craft bourbon, with great care taken in the recipe, distillation, and aging. It is not a mass market product, and as the name implies not much of it is made. Far from being aged for two years, Noah's Mill is aged for fifteen years. It is also cask strength, meaning that it is not cut with water between blending and bottling.
Noah's Mill is bottled at a whopping 114.3 proof (51.5% alcohol), and has a smoothness not found among younger whiskies of similar strength. That is the point of the extraordinary aging period: to mellow out what would otherwise by a potent wallop. Another result of the long aging is the powerful tannins in the drink - this may be mellow for a cask strength bourbon, but it is strong, full-bodied, and has a long, deep finish.
