Tasting notes
Unmistakably Shiraz; dark purple to the rim, it clings to the glass leaving its glycerin endowed reddish remnant. The nose is best described as pure, unobstructed by excessive oak. The Shiraz truly shines. Dark, dense and creamy; aromas of anise, tobacco, and mocha emerge from the glass. An explosion of dark berry, black cherry, exotic spices and chocolate fill the mouth; complete from attack through a long, lingering finish. A very special Cake indeed!
Technical notes
The Barossa Valley’s “Golden Mile” is planted to old craggy vines in iron rich, red soils with layers of pebbles and limestone. Balanced, sustainable vineyard methods are practiced in the vineyards we use. The root stock, gnarled and dense, is well established in the soil, each vine seeming to have history dating back well over fifty years. Unlike most Barossa winemakers, Jayson Woodbridge tends to keep crop levels near three to four tons per acre; one-half to one-third the amount of others in the area. He will always forgo quantity for quality. Over cropping is not an option with Layer Cake.
